Pretty simple one really, 2 week maceration, destemmed. Pressed to a combo of old hogs, puncheon and barrique (mostly puncheon). Let it rest for 2 years (So much fruit and tannin!). dashes of S02 after MLF, at racking and at bottling. 20ppm each time.
