2018 Sunbury Sauvignon

Love this wine, but it was a real pain to get to bottle.

Couple of days on skins, pressed to old wood for ferment. Racked off lees, back to barrel, where it sat for another 23 months. This wine just took ages for the fruit to calm down and find balance, but we’re so thrilled with where it’s at.

10ppm after MLF and 25ppm at bottling.

120 dozen bottled.
