2016 Nebbiolo Rose. A selection of Nebbiolo clones from the Chalmers Vineyard in Mildura. The fruit received a long cold soak (3 days as whole bunches, 2 days destemmed) in order to try and drag out a bit of phenolics and cool fruit down from 400'c to something more appropriate for fermentation. It was then basket pressed and fermented on full solids. 

2 grams of residual sugar remains but the awesome natural acidity in the wine keeps the palate dry. 

No fining or filtration and only some s02 added to stop it becoming a pet nat. No other additions made to the wine.
